Whiskey must be distilled to 160 proof or 80 proof alcohol by volume, whichever is higher. Many of the barrels used in the aging process of Jack Daniels whiskey are later shipped to Scotland to be converted into Scotch Whisky. In this process, some impurities and harsh flavors are removed from the spirit. The distillate must be aged in barrels before it can be filtered through ten feet of sugar maple charcoal. Although it has some characteristics of bourbon, it is actually Tennessee sour mash whiskey, not bourbon. People frequently mistake Jack Daniels for a bourbon made in the United States. Jack Daniel’s is charcoal-mellowed in a process that takes up to 10 days, and is bottled at 80 proof (40% alcohol by volume). Some Tennessee whiskeys are blended with bourbon, rye, or other whiskeys, but Jack Daniel’s is a straight whiskey made from a mash bill of 80% corn, 12% rye, and 8% malted barley. The product meets the regulatory criteria for classification as a straight bourbon, though the company disavows this classification and markets it simply as Tennessee whiskey rather than as Tennessee bourbon. Jack Daniel’s home county of Moore is a dry county, so the product is not available for purchase at stores or restaurants within the county. It is produced in Lynchburg, Tennessee, by the Jack Daniel Distillery, which has been owned by the Brown-Forman Corporation since 1956.
